If you're patient (or can put a few bottles aside), this wine will age beautifully for the next 5 - 8 years.
HoweverÂ… if youÂ’re as impatient as I am and choose to drink it right away, please be sure to decant the wine to let it "breathe" properly. It will bring out all the wonderful dark fruit aromas and smooth the bold tannins.
Serving advice
This is a bold Cabernet Sauvignon. Therefore, please open your bottle for at least 1 hour before enjoying it. It is fascinating to see how the wine opens up, how the beautiful dark fruit comes through, and how the tannins gradually get smoother.
Food match
This 2022 vintage has a great depth of fruit, which I believe would pair beautifully with an herb-crusted beef loin or a rack of lamb.
A nice plate of strong cheeses (think blue cheese or aged cheddar) will also be an excellent accompaniment for this wine. And be sure not to forget the serrano ham!
I recommend mushroom risotto or a spicy vegetarian pizza if you're looking for a vegetarian pairing.
